50 g of cocoa
4 eggs
125 g flour
75 g of potato starch
+ 250 g sugar 20 g
½ teaspoon baking powder
1 c. coffee vanilla powder
250 g butter 15 g +
1 pinch of salt

- Grease a cake tin 25 cm long. Sprinkle with 20 g of sugar and place it in the refrigerator.
- Preheat oven to th.8 (240 ° C).
- Separate the whites from the yolks of 4 eggs 65 g . Whisk the egg yolks with 250g sugar and 20 g until frothy and foamy .
- Melt 250 g butter 15 g gently in a bain- marie . Pour over eggs. Mix .
- Add the cocoa , flour , 75 g starch potatoes and ½ teaspoon baking powder sifted together, while mixing. Perfume 1 c . coffee vanilla powder .
- Mount the egg whites until stiff , adding 1 pinch of salt. Then fold them gently to the previous preparation lifting the mass with a spatula.
- Pour into mold. Bake and cook for 10 min. Bring the th.7 (210 ° C) and cook for 20 min. Allow to cool .
