Eel Provençale

Ingredients (serves 6):
- 800 g eel
- 1 onion
- 2 tablespoons olive oil
- 4 tomatoes
- 1 bouquet garni (thyme, bay leaf, parsley)
- 1 clove garlic
- 1 dl dry white wine
- 12 black olives
- Parsley
- Salt and pepper
Preparation of the recipe:
- Chop the onion. Cut the tomatoes into small cubes. Crush the garlic clove. Chop the parsley.
- Allow to cure slowly chopped onion in oil.
- Cut the eel into pieces. Make stiffen the pieces of eel in onions.
- Add diced tomatoes, bouquet garni and crushed garlic. Add the white wine.
- Cook gently, covered, for 25 to 30 minutes.
- Add black olives 10 minutes before serving.
- Sprinkle with chopped parsley.
