ingredients:
1 leg of lamb 2.5kg
250g pork rind
500 g of potato
200 g of carrots
300 g onions
1 bouquet garni
30 cl beef broth
10 cl of olive oil
10 cl of cognac
50 cl of white wine
hot water
salt pepper
Preparation:
- Preheat oven to 120 ° C.
- Peel and cut the onions and carrots in pieces.
- Salt and pepper the lamb.
- Fry in a pan with hot oil.

- Drop to the leg and wrap the carrots, potatoes and onions.
- Add remaining ingredients, salt and pepper.
- Bake for 7 hours by pouring hot water regularly on the leg.
