Carrot Cake in my way
For this recipe , you will realize 2 carrot cake and stack separated by a layer of topping .
1 carrot cake for 3cm in height and 25cm in diameter, you will need: ( action step 2 times or if you have a big enough pan double the quantities directly )
• 250 g finely grated carrots
• 80 g chopped walnuts
• 4 eggs , separating the whites from the yolks
• 140 g agave syrup or brown sugar 180 g
• 280 g of flour ( 100 g of wheat flour, corn flour 180g )
• 160 g butter, softened
• 2 teaspoons cinnamon
• 2 teaspoons vanilla extract
• The juice of one orange
• ½ tablespoon nutmeg
• ½ teaspoon baking powder
To achieve the topping ( proportions to cover 2 carrots cakes) , you must :
• 500g mascarpone
• 120 g icing sugar
• 4 egg whites
• A few drops of almond flavoring or marsala
Preheat oven to 180 ° C.
To carry out the carrot cake , melt the butter in a bain marie .
Whisk the egg yolks, agave syrup (or brown sugar ) until smooth.
Stir in the melted butter and mix again.
Add finely grated carrots , chopped walnuts , flour , baking powder , cinnamon , nutmeg, vanilla, orange juice and three pinches of salt .
Mount the egg whites with a pinch of salt and stir gently to your preparation.
Pour into a buttered cake pan .
Bake the dish in your preheated 180 ° C oven for about 1 hour.
If you chose to double the quantities directly , the cooking time will be a little longer. Regularly check the doneness by inserting the tip of a knife. Cooking will be perfect when the tip of the knife come out clean.
To carry out the topping , mix the mascarpone , almond flavoring and sugar.
Reward beat the egg whites and gently fold the mascarpone mixture , sugar.
Once cooled carrot cake , coat it with icing .
If you chose the realization of two carrot cakes , coat the top of the first cake frosting. Place the second cake on top and drizzle everything with the topping .
