Rice with chicken and red beans
- Ingredients
1/2 cup olive oil
1 onion, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
3 garlic cloves, minced
2 cups tomato puree (juice)
2 cups basmati rice boiled
1 chicken breast (without skin or bone) and a spare clip poached medium
1 cup red beans boiled
1 teaspoon salt
1/2 teaspoon white pepper
1 teaspoon ground dry oregano
1 teaspoon ground cumin
1/2 teaspoon ground coriander
Sour cream (sour cream) and grated mozzarella cheese for garnish
- Method
- Heat oil in a pot over medium heat, add onion and green and red peppers and garlic, stirring for 5 minutes until tender.
- Add tomato puree, rice, chicken and beans, stir the mixture and simmer for about 15 minutes, stirring from time to time.
- Season the mixture with salt and white pepper, add the oregano, cumin, coriander, stirring until it is smoothing ingredients.
- Put rice in a serving dish and garnish with a little sour cream and mozzarella cheese.
