Chickpea soup
In Quebec, Soupesoup restaurants no longer needs an introduction . There is not one, but six restaurants in the brand founded by Caroline Dumas, répendus in the trendiest neighborhoods in Montreal .
Even if it is a brand that has been around for a good few years in Montreal , I personally have not gone recently in one of his restaurants and I was dazzled by how the soups were good. The name is not for nothing , and if you like soup , it's really a good place to go.
Got home I ordered the first book of Caroline Dumas (she has two ) and today I 'm already the second recipe Soupesoup [ Paperback ] .
The book contains neither more nor less than 65 soup recipes , 40 salads, 40 sandwich recipes and a few desserts.
There's something for everyone , fresh and hot soups, vegetable soups , meat , thai of inspiration , Hungarian, Spanish , not to name a few . I chose this soup chickpeas in eastern because I already had all the ingredients at home, but it may well be that you find other recipes from the same book on my blog coming weeks .
INGREDIENTS (for 6 portions)
- 2 tablespoons olive oil
- 3 cloves garlic, chopped
- 1 onion, finely chopped
- 1 teaspoon cumin
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon turmeric
- leaves from 2 thyme sprigs
- 3 tomatoes, diced
- 2 celery stalk, finely chopped
- 1 red bell pepper, finely chopped
- 2 cups vegetable broth
- 2 cups water
- 2 cups (500 g) chickpeas (in can)
- salt and pepper
- 1/4 chopped cilantro
Mrthod:
- Heat oil in a saucepan over medium heat. Cook garlic, onion, spices and thyme for 5 minutes
- Add tomatoes and cook for 2 minutes
- Stir in celery, red pepper, water and vegetable broth. Bring to boil, then reduce heat and simmer for 10 minutes
- Add chickpeas, season and simmer for another 5 minutes to heat through
- Garnish with chopped cilantro just before serving.
