Miso Soup

ingredients :

1 carrot 
2 onions 
70 g of fungi 
6 c. Miso soup (miso is a vegetarian condiment found in Asian grocery stores and organic supermarkets) 
1 c. Coffee sunflower oil 
2 cloves of garlic 
10g ginger 
1 l of water

Preparation :
  • Peel carrots and cut into thin slices. Peel and chop the onion and mince the garlic. Wash the mushrooms and cut them into small pieces. Grate the ginger. 
  • Heat the oil in a saucepan over medium heat. Add garlic and onions and sauté over low heat. 
  • Add the ginger, carrots and mushrooms. Cook 10 minutes, until vegetables are tender. 
  • Dissolve miso in 100 ml of water, then add the vegetable broth. 
  • Cook for 20 minutes, then serve hot.
