Spaghetti Squash patties
The discovery of the century! Finally, for me anyway. It was the first time in my life that I cooked and ate spaghetti squash! It's been a few years that I wanted to taste, but I've never found. And voila, it's done. I bought, cooked and eaten my first spaghetti squash. Well it was up to my expectations, if not more! I would not have believed that his "spaghetti" ... much to resemble spaghetti. Both say that I had fun! A real little crazy! Yes, yes, I am one of those people that can make euphoric squash. I say "these people" because-I hope not to be the only one. Reassure me ... I am not alone, eh? Hmm ... Well too bad. I will take only my gourd euphoria.

We start by cooking the squash (essential before cooking)

After 20 minutes, remove it and let it cool on a rack. Still no spaghetti in sight.
Once cooled a bit, remove the seeds with a spoon.
And then, using a fork, scrape. It was at this moment that spaghettos make their appearance!

Scratch and put the spaghetti in a bowl as you go.

As I was in utter euphoria, to shouts of joy and amazement, I did not think to "spin" the flesh to drain the liquid (in a clean cloth). I think it could speed up the cooking then. But if you too are completely gaga before your squash and you forget the spin, it does not matter.

Heat the olive oil in a skillet over medium heat. Make small heaps and flatten slightly.
Cook the patties about 5 minutes on each side. Repeat until no more squash. Between each "batch", add a little oil in the pan.
Keep pancakes warm and prepare the sauce. Mix lemon juice and yogurt.
