- INGREDIENTS (FOR 4 PERSONS):
- 10 egg yolks
- 180g of sugar
- Crème fraiche 500ml liquid
- Milk 500ml
- 1 vanilla pod
- Brown Sugar
- PREPARATION:
1. Beat the egg yolks and sugar until the mixture whitens.
2. Bring the milk and liquid fresh cream to a boil on the stove, then add vanilla.
3. Turn off the heat and let steep for ten minutes and mix the milk with the paste of egg and sugar. Filter the mixture and divide into eight ramekins resistant to heat.
4. Preheat oven to 96 ° C (fan oven function), then bake for 35-40 minutes (steaming alternate function).
5. After baking, the cream should be almost solid. Let cool and refrigerate for at least two hours.
6. Sprinkle the cream with the sugar and caramelize. Serve immediately.
