Lamb tagine with honey and onions

- Ingredients (for 4 people):
- 1 kg lamb (necklace, boned side ... )
- 500 g pearl onions
- 100 g of liquid honey
- 1 teaspoon of ginger powder
- 1 pinch of saffron threads
- 2 tablespoons olive oil
- 1 handful of blanched almonds ( optional)
- 2 handfuls of raisins (optional)
- Salt and pepper
- Preparation of the recipe:
- Cut the meat into large cubes . Peel the pearl onions ( soak in a bowl of cold water for 20 minutes before peeling easier ) .
- Heat the oil in a tagine dish or casserole in the oven and on the stove. Make brown the pieces of meat with onions 2 .
- Add the raisins if you , honey , ginger , cinnamon and saffron. Salt and pepper.
- Stir and cover with water . Cover and simmer about 1 hour over low heat.
- Remove the meat and set aside.
- Reduce the cooking juices for three quarters , then turn the meat. Add the remaining onions and cover.
- Slide the oven at 200 ° C ( thermostat 6-7) and cook 45 min.
- When serving , sprinkle with dry roasted almonds. Serve with couscous or potatoes (which can be added to the dish before baking ) .
