Meatballs with tomato sauce

- Ingredients (for 4 people):
- 250 g of roast meat cooked ground beef
- 1 egg yolk
- 1 tablespoon paprika
- 3 onions
- 1/2 bunch parsley
- 240 g of peeled tomatoes ( 1 small can )
- 1 nice pepper
- 1 zucchini
- Olive oil
- Salt and pepper
- Preparation of the recipe:
- Chop the onion and let it brown in an oiled pan with half the parsley . Sprinkle with paprika.
- Knead the meat cooked with onion and egg yolk.
- Shape into balls and cook in hot oil for about ten minutes.
- Prepare the sauce: Melt the remaining 2 chopped onions in oil with thyme , salt and pepper. Add the tomatoes and simmer 15 minutes.
- Slice the peppers into strips and cut the zucchini into cubes. Cook 5 minutes in boiling water, drain and pour in the sauce. Add meatballs and cook 5 minutes.
Sprinkle with chopped parsley.
