Vegetarian Pizza

- Ingredients (for 4 people):
For the dough:
- 200 g of flour
- 1 packet of yeast
For the filling:
- 1 eggplant
- 4 large tomatoes
- 190 g mushrooms (1 box )
- 100 g of asparagus ( 1 small can )
- 8 slices of Emmental
- 1/4 pepper
- 6 black Greek olives
- salt
- oregano
- Preparation of the recipe:
- Provide release time for the dough 2 hours.
- Prepare the dough : Dissolve the yeast in warm water 25 cl . Mix in a bowl the flour with a pinch of salt , olive oil and yeast . Let stand two hours.
- Cut the eggplant into slices. Salt and brush with olive oil. Bake for 15 minutes in the oven at 220 ° C ( gas mark 7 ) .
- Scald tomatoes and peel. Cut into slices and remove a portion of the pulp so as not too wet dough .
- Roll out the dough on a pizza pan , there have sliced cheese , tomatoes , eggplant, mushrooms, asparagus , bell pepper into strips , black olives . Season with salt and sprinkle with oregano .
- Bake in preheated oven at 240 ° C (gas mark 8) about 30 min.
Notes:
We can add the Italian grated cheese on top , and artichoke hearts .
