Cheese cake with chocolate






First, a huge thank you to my favorite vegetarian Valkyrie to his recipe and all its revenues abroad. This cheesecake without cheese is a marvel. Light, like "air", he has taste, texture, and mouth sacred personable! And then zero animal products THE perfect cake I tell you :)

  • For a round mold about 19 cm:

The layer of biscuit:
150g biscuit-type cookies
50g margarine without hydrogenated fat

The unit:
400g silken tofu (!! I've finally found in Sweden, alleluia!!)
200 ml of coconut milk
80g icing sugar
40g cornflour
1 tsp vanilla extract
30g grated coconut

Icing:
100g dark chocolate
200 ml of coconut milk
1 case of hydrogenated fat free margarine





The day before, we take care of the base of the cheesecake :

  • For the biscuit :
Crumble the biscuits finely enough (as here) , melt the margarine and mix well.
Line the bottom of the pan with parchment paper ( springform pan will be highly appreciated :) and firmly pack the cookies in the background. Reserve in the fridge.
For the unit:
Preheat oven to 150 ° C.
Combine all ingredients except grated coconut : silken tofu , coconut milk , sugar, cornstarch and vanilla. Homogenize the blender for a smooth texture.
Add coconut , mix and give a bit of a blender ( this is good with small pieces !) .
Bake until it is cooked : the edges must be well taken and the middle still a little wobbly . Cooking time: a little over 1 hour at home, 50 minutes from Val ' , so I 'd rather let you decide :)
Allow to cool in the oven off and caught one night in the fridge.





The next day, the frosting:
Melt the chocolate, fat and coconut milk in a bain-marie. Mix well.
Once the homogeneous household, made ​​the icing 3 times (good advice Val '). Pour 1/3 of the mixture over the cheesecake, leave at least 15 minutes in the fridge. Re third and re fridge. Then pour the last third by covering the edges well and let take a few hours in the fridge before cutting (not like me what ...).


TIPS

I think the margarine in chocolate icing is optional. I'll try without next time. And try to trade against the margarine of coconut oil, it will be great I'm sure!


On the dose of sugar, for me it was perfect! But some (never happy men;) can enjoy a little more smoothly. In this case, do as the Val advises', use 100g icing sugar instead of 80.
