Muffins with raisins and sweet potato


Thanksgiving, it starts tomorrow. Or rather it ends tomorrow saw that there was right from every angle on all the blogs American kitchen for about a month, normal. The muffins were super soft, and against all odds, even for someone like me who is not really adept or cinnamon or raisins ('but why have you done this recipe?' T ask me-we, and we will be right), and I found I was far from the only-they were super good, not too sweet and fluffy as it should. I even said it could be served as an accompaniment with meat sauce, but hey it's just an idea. As Americans often use the cornbread (cornbread) with meat, it seemed not completely incoherent. Muffins with raisins and sweet potato


Preparation time: 10 minutes + 1 hour
Cooking time: 25 minutes
For 12 to 14 muffins

  • ingredients:
- 200 g of raising flour
- 200 g of sugar
- 1 teaspoon of cinnamon powder
- 1 pinch of nutmeg powder
- 1 large pinch of salt
- 2 eggs
- 90 g of mashed sweet potato ( sweet potato = 1 )
- 60 ml of orange juice ( 100 % orange juice )
- 80 ml of vegetable oil
- 50 g of raisins

  • Method : 
1 . Roast sweet potatoes for 1 h at 200 ° C until the flesh is tender. Peel , mash with a fork, weigh 90 g aside. Soak the raisins in a bowl of warm water for 10 minutes , then drain and set aside.

2 . Preheat oven to 190 ° C. Butter or top with muffin trays . In a large pot , combine the flour , sugar , salt , cinnamon and nutmeg. In another saucepan , whisk together the eggs , mashed sweet potato, vegetable oil, orange juice and raisins . Add the wet mixture to the dry mixture and mix until the consistency is smooth.

3 . Pour into prepared and bake for 25 minutes molds. Let cool a few minutes before serving.
